Linda Forster

Founder and in charge of daily running. Linda

Linda is the founder of Gluten Free UAE and also mum of Aili who has Celiac disease. Aili is the very reason Gluten Free UAE was started. Linda runs a gluten free house and is hoping to spread awareness about Celiac disease and its symptoms.

“Hopefully no one else will have to suffer like we did” she says.
When Linda isn’t busy managing Facebook, twitter and running the website, she is trying to think up the next event, emailing companies asking for ingredients to review or doing research about gluten. She is hoping to set up training sessions for restaurant staff across UAE. Gluten Free UAE is almost becoming a full time job (without the pay!) so offers of help are always appreciated. RachnaRachna Manghnani

Rachna is from India, but has been living in Dubai her entire life. She was diagnosed with celiac disease in August 2010. After her diagnosis, she remembers thinking that it would be so easy to remove gluten from her diet – just substituting it with other grains like rice, amaranth and sorghum. Little did she know that seemingly innocent snacks like French fries, packet of chips, ice cream or even chocolate could contain gluten! It was a huge learning curve. She says; ‘The plus side is that I’m more aware of what goes into my food. Also, celiac disease is one disease in which we don’t have to take any medication – just avoid gluten (easier said than done)’. When she is not staring down the ingredients list on a packet, She is usually reading or exploring her creative side’.

RamonaRamona Guia

Ramona is from Romania a non-sensitive Coeliac. Although very frustrated at the beginning about the gluten-free diet, as she has no external reaction when eating gluten, she has  now come to fully embrace it. She says; ‘After 2 years I now call it “a blessing in disguise” due to the fact that I eat much more healthy, fresh and natural food’. Beside the gluten-free lifestyle, she enjoys going to the gym, watch good movies and read tons and tons and tons of books!

Wendys’ background is as an Environmental Manager who has then gone on to train as a Nutritional Advisor to better understand the impact of gluten on the body. Wendy is a mum of a 6 year old boy with celiac disease. He was the first person in their family to be diagnosed and it was a very steep learning curve to convert the entire kitchen to a gluten free kitchen. Having lived in Dubai for 5 years she has a good knowledge of gluten free products and restaurants and is dedicated to investigating all the new gluten free options which are increasingly becoming available in the UAE. Having said that the focus in their house is definitely on clean eating rather than recreating gluten free goodies but who doesn’t love a meal out or a slice of cake every now and then?

    Hey Linda, I just came across your portal..I recall you visiting our store…:), I’d love to have your fans/followers to visit Nature’s Chalet given we provide Gluten free products..we stock them separately given cross contamination and have been receiving great feedback from shoppers… Do include us in the “Go to stores” for organic and gluten free items located in motor city,,would love to see you again as well as your followers..
