300g veal bacon, finely chopped
4 tins chopped tomatoes
2 cans water
1/2 can brown lentils
4 tbsp brown sugar (to taste)
2 tbsp balsamic vinegar (to taste)
1 sprinkle cayenne pepper (to taste)
1 tsp garlic sprinkles
Greek yoghurt and chives to serve
Sizzle veal bacon in a pan until beginning to crisp, then add tomatoes and water. Bring to the boil, adding lentils, garlic and cayenne pepper. Add balsamic vinegar, then sugar to taste. Bubble and boil until tomatoes reduce and it becomes thick and soupy. Serve with a dollop of greek yoghurt and a sprinkling of fresh chives.
Variations: Substitute bacon with chorizo sausage, add rice, rice noodles, english spinach, or pretty much anything else.
